Se per le prime quattro categorie \u2013 dolce, salato, amaro e acido \u2013 \u00e8 pi\u00f9 facile dare una definizione, per il pi\u00f9 \u201cgiovane\u201d umami invece risulta pi\u00f9 complicato, e proprio per questo per lungo tempo \u00e8 stato considerato come un sapore \u201c<strong>misterioso<\/strong>\u201d. <\/span><span style=\"font-weight: 400;\"><br><\/span><span style=\"font-weight: 400;\">Venne scoperto nel 1908 dal professore Kikunae Ikeda dell\u2019universit\u00e0 di Tokyo quando, durante uno studio chimico sulle alghe kombu, riusc\u00ec ad isolare il glutammato monosodico, il sale di sodio dell\u2019acido glutammico &#8211; uno dei 23 amminoacidi &#8211; responsabile di un sapore particolarmente gustoso e presente naturalmente in molti alimenti quotidiani. Nel 1985 venne ufficialmente riconosciuto come gusto primario dalla comunit\u00e0 scientifica.<\/span><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" loading=\"lazy\" width=\"1024\" height=\"576\" src=\"https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/05\/umami-glutammato.jpg\" alt=\"glutammato\" class=\"wp-image-1852\" srcset=\"https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/05\/umami-glutammato.jpg 1024w, https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/05\/umami-glutammato-300x169.jpg 300w, https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/05\/umami-glutammato-768x432.jpg 768w, https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/05\/umami-glutammato-750x422.jpg 750w, https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/05\/umami-glutammato-480x270.jpg 480w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Che gusto ha l&#8217;umami?<\/strong><\/h2>\n\n\n\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Si pu\u00f2 definire il sapore dell\u2019umami come \u201c<strong>appetitoso<\/strong>\u201d con una delicata nota sapida, un\u2019intensa aromaticit\u00e0 e un sapore molto gustoso. Queste sue caratteristiche lo rendono un esaltatore di sapori a sua volta, al punto che secondo alcuni studi potrebbe influenzare la saziet\u00e0. Anche questa sua tendenza sapida porta benefici alla salute e pu\u00f2 ridurre l\u2019utilizzo di sale nelle preparazioni. <\/span><b>Non \u00e8 da confondere con il gusto salato<\/b><span style=\"font-weight: 400;\">, anche se molti alimenti che definiamo \u201csaporiti\u201d possono vantare una marcata sapidit\u00e0, come la soia o il parmigiano reggiano stagionato. Infatti si trova anche in pietanze con una spiccata tendenza dolce o acida, come il mais o i pomodori.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Normalmente i gusti amaro e acido sono riconosciuti come pericolosi dal nostro cervello perch\u00e9 se consumati in quantit\u00e0 eccessive possono diventare nocivi. Al contrario invece il dolce, ricco di zuccheri e fonte di energia, e il sapido, in cui abbondano i sali minerali, sono gusti molto apprezzati dal nostro corpo. Da non dimenticare sono i funghi e le alghe che hanno un elevato contenuto umami, in particolare quelli di origine giapponese. Ecco alcuni esempi:<\/span><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Formaggi stagionati o carni bianche<\/strong><\/h3>\n\n\n\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">La grassezza e l\u2019intensit\u00e0 aromatica di questi due alimenti richiedono un grande rosso dotato di struttura e complessit\u00e0.
