Si riferisce al passaggio enologico che prevede la <\/span><b>rimozione dei lieviti residui<\/b> <b>rimasti all\u2019interno delle bottiglie <\/b><span style=\"font-weight: 400;\">in seguito della seconda fermentazione. Proprio in questa fase il vino acquisisce la sua effervescenza finale poich\u00e9 gli zuccheri rimasti in bottiglia vengono trasformati in alcool e anidride carbonica. In questo procedimento, detto appunto <\/span><b>rifermentazione in bottiglia<\/b><span style=\"font-weight: 400;\">, i lieviti muoiono e si depositano sul fondo della bottiglia per venire rimossi e ottenere cos\u00ec uno <\/span><a href=\"https:\/\/www.callmewine.com\/spumanti-C8.htm\"><span style=\"font-weight: 400;\">spumante<\/span><\/a><span style=\"font-weight: 400;\"> limpido e privo di sedimenti.<\/span><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" loading=\"lazy\" width=\"1024\" height=\"576\" src=\"https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/09\/sboccatura.jpg\" alt=\"la sboccatura dello spumante\" class=\"wp-image-2280\" srcset=\"https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/09\/sboccatura.jpg 1024w, https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/09\/sboccatura-300x169.jpg 300w, https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/09\/sboccatura-768x432.jpg 768w, https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/09\/sboccatura-750x422.jpg 750w, https:\/\/www.callmewine.com\/blog\/wp-content\/uploads\/2023\/09\/sboccatura-480x270.jpg 480w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Le fasi della sboccatura<\/strong><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">Ecco le fasi che si svolgono in cantina che precedono e seguono la fase della sboccatura:<\/span><\/p>\n<ol>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Liqueur de tirage<\/b><span style=\"font-weight: 400;\">: A seguito della prima fermentazione che trasforma lo zucchero presente nel <\/span><a href=\"https:\/\/www.callmewine.com\/blog\/wine-academy\/how-to\/mosto-uva\/\"><span style=\"font-weight: 400;\">mosto<\/span><\/a><span style=\"font-weight: 400;\"> in alcool, il vino base viene imbottigliato insieme ad una miscela di zuccheri e lieviti, detta \u201cliqueur de tirage\u201d, e sigillato con un tappo a corona.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Seconda fermentazione<\/b><span style=\"font-weight: 400;\">: Si alimenta cos\u00ec una seconda fermentazione in bottiglia in cui gli zuccheri rimasti vengono mangiati dai lieviti e trasformati in alcool e CO2, conferendo al vino la classica effervescenza.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Maturazione sui lieviti<\/b><span style=\"font-weight: 400;\">: Questo processo pu\u00f2 durare per mesi o anni, in base alla scelta del produttore e allo stile che vuole ottenere. L\u2019idea \u00e8 che il potenziale spumante rimanga a contatto con i lieviti per lungo tempo per far in modo che il liquido assorba tutto ci\u00f2 che i lieviti hanno mangiato.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Pupitres<\/b><span style=\"font-weight: 400;\">: Le bottiglie vengono adagiate su delle <\/span><b>pupitres<\/b><span style=\"font-weight: 400;\">, cavalletti in legno a forma triangolare costituite da due tavole forate nelle quali si adagiano le bottiglie inclinate a testa in gi\u00f9. Le fecce, i residui e sedimenti dei lieviti, si depositano sul fondo che in questo caso corrisponde al collo della bottiglia. Quotidianamente vengono ruotate le bottiglie fino a che dopo circa 40 giorni si trovano quasi in verticale.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Raffreddamento<\/b><span style=\"font-weight: 400;\">: Una volta che i lieviti si sono addensati sul collo, quest\u2019ultimo viene immerso in una soluzione ghiacciata che crea un sedimento compatto solido formato appunto dai lieviti esausti.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Degorgement (sboccatura)<\/b><span style=\"font-weight: 400;\">: A questo punto si procede con la sboccatura vera e propria, passando alla rimozione del sedimento ghiacciato. Viene rimosso il tappo a corona e la pressione interna espelle il sedimento. A questo punto si tappa nuovamente la bottiglia con il classico tappo di sughero. Questo processo deve essere svolto nel minor tempo possibile e con estrema precisione da esperti oppure da macchine automatiche.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Dosaggio<\/b><span style=\"font-weight: 400;\">: Prima di procedere alla tappatura, pu\u00f2 essere aggiunto una nuova miscela, perlopi\u00f9 segreta, il liqueur d\u2019expedition\u201d. Questa contiene zuccheri, vino, vecchie annate e altri ingredienti e determina il livello di dolcezza del vino.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Tappatura e affinamento<\/b><span style=\"font-weight: 400;\">: lo spumante viene chiuso definitivamente con un tappo di sughero e sigillato con una capsula metallica.
