Oppure perch\u00e9 il vino rosso ha proprio questo colore?<\/span><span style=\"font-weight: 400;\"><br><\/span><span style=\"font-weight: 400;\">Allora partiamo da un presupposto che, per quanto sia importante, non \u00e8 cos\u00ec scontato: a prescindere che si tratti di uva rossa, bianca, rosata, il <\/span><b>colore del mosto, ovvero il succo di uva nato dalla pigiatura e pressatura dei grappoli<\/b><span style=\"font-weight: 400;\">, \u00e8 sempre bianco inizialmente. <\/span><span style=\"font-weight: 400;\"><br><\/span><span style=\"font-weight: 400;\">Il processo tramite cui il <\/span><a href=\"https:\/\/www.callmewine.com\/blog\/wine-academy\/how-to\/mosto-uva\/\"><span style=\"font-weight: 400;\">mosto<\/span><\/a><span style=\"font-weight: 400;\"> (parte liquida) si colora \u00e8 il contatto con le sue vinacce (la parte solida, ovvero bucce o raspi e vinaccioli), la cosiddetta <\/span><b>macerazione pellicolare<\/b><span style=\"font-weight: 400;\">. Le bucce, infatti, sono ricche di diverse sostanze, tra cui i <\/span><a href=\"https:\/\/www.callmewine.com\/blog\/wine-academy\/tannini-e-vino-tannico\/\"><span style=\"font-weight: 400;\">tannini<\/span><\/a><span style=\"font-weight: 400;\">, responsabili della sensazione di rugosit\u00e0, e soprattutto gli antociani, sostanze coloranti che si dissolvono quando entrano in contatto con il mosto. <\/span><span style=\"font-weight: 400;\"><br><\/span><span style=\"font-weight: 400;\">Se il contatto tra mosto e bucce a bacca rossa \u00e8 prolungato (di media 10-15 giorni, ma pu\u00f2 arrivare ad anche un mese) allora \u00e8 il caso di un <\/span><b>vino rosso<\/b><span style=\"font-weight: 400;\">, se il processo \u00e8 breve allora si parla di <\/span><b>vino rosato<\/b><span style=\"font-weight: 400;\">, se, invece, non c\u2019\u00e8 proprio contatto nasce il <\/span><b>vino bianco<\/b><span style=\"font-weight: 400;\">. Non \u00e8 tutto, per\u00f2, avete mai sentito parlare degli <\/span><a href=\"https:\/\/www.callmewine.com\/pages\/orange-wine\"><b>orange wine<\/b><\/a><span style=\"font-weight: 400;\">? Deriva dalla fusione dei termini \u201ccrio\u201d che significa \u201cfreddo\u201d o \u201cghiaccio\u201d, e la tecnica di macerazione sulle bucce. Dunque, come si deduce, la tecnica consiste nel <\/span><b>raffreddare il mosto a contatto con le bucce a basse temperature<\/b><span style=\"font-weight: 400;\"> per un tempo relativamente breve, mediamente di 12 ore. In questo modo il freddo inibisce l\u2019azione degli enzimi che catalizzano la <\/span><a href=\"https:\/\/www.callmewine.com\/blog\/wine-academy\/sommelier-tips\/fermentazione-del-vino\/\"><span style=\"font-weight: 400;\">fermentazione<\/span><\/a> <b>alcolica<\/b><span style=\"font-weight: 400;\"> e allo stesso tempo permette al mosto di estrarre al meglio le componenti e gli aromi primari dalle bucce. Infatti, la bassa temperatura provoca parziali congelamenti che aumentano il volume dell\u2019acqua e vanno a lesionare le membrane cellulari, agevolando cos\u00ec la diffusione delle sostanze presenti nella buccia. Normalmente questo processo avviene prima della fermentazione alcolica e dopo la pigiatura. Prevede che i grappoli interi, non ancora diraspati, vengano messi dentro ad <b>un\u2019autoclave saturo di anidride carbonica<\/b> e privo di ossigeno. I grappoli si schiacciano uno contro l\u2019altro per gravit\u00e0 e liberano un succo che inizia a fermentare e generare anidride carbonica. L\u2019anidride carbonica si somma a quella gi\u00e0 presente nell\u2019autoclave e innalza la temperatura fino a 30\u00b0C, innescando una <b>fermentazione alcolica intracellulare<\/b>, ovvero all\u2019interno degli acini (metabolismo anaerobico in assenza di ossigeno). Tutto questo diminuisce la resistenza delle bucce che rilasciano il liquido inizialmente fermentato.
