BACCAROSSA POGGIO LE VOLPI 2021 DESCRIPTION

The Baccarossa signed Poggio le Volpi is a very interesting bottle, which allows us to deepen our knowledge of a little widespread Latium grape, Nero Buono. Already at the sight one realizes how this grape gives a particularly dark and deep tone, while then, bringing the glass closer to the nose, one is enveloped by fruity notes framed by balsamic references. The sip definitely conquers thanks to excellent tannins, which contributes softness to the drink. A label to try when drinking and culture go hand in hand.

Baccarossa is made by the Poggio Le Volpi winery from pure Nero Buono grapes, a native Latium grape whose cultivation is confined to the Latina area. The vines grow using the spurred cordon espalier system in soils of volcanic, pozzolanic and sandy origin, which are influenced by sea breezes. The bunches selected during the harvest are immediately taken to the winemaking rooms, where they are de-stemmed. The resulting berries are sent to the pressing stage, and the must obtained from this operation ferments at a controlled temperature, macerating in contact with the grapes. Final aging lasts one year and takes place in barriques.

Poggio le Volpi's Baccarossa wine announces itself in the glass with a concentrated color, reminiscent of ruby hues. The nose is rich and generous, orchestrated on continuous cross-references of ripe small berries and balsamic sensations; nuances of coffee also emerge on the finish. On the palate, it is medium-bodied, with a dense, almost tactile sip, however, that develops in the mouth with a spicy flavor; the tannic texture presents a certain liveliness that "awakens" the palate, but without ever being disturbing to the tasting. Always at the top of the Italian guides, it traces an exhaustive profile of an autochthonous all to be discovered.
