CHABLIS WILLIAM FEVRE 2021 DESCRIPTION

The French Chablis combines the fruity aromas of the starting varietal used, Chardonnay, with a soft freshness and a savoury-mineral taste typical of the Kimmeridgian terroir, in which limestone and marl hold sway in this part of Burgundy. A bottle signed by William Fevre that is thus the fruit of the fruitful relationship established between grape variety and terroir, which, although ready to be uncorked now, can still face good ageing to present itself with an even more interesting profile when opened.

This Chablis originates from the pure use of a major international white grape variety, Chardonnay, grown within the Chablis AOC. The harvest is strictly manual, and during the winemaking process, the principle of gravity is used to avoid pumping operations, which are considered detrimental to the final quality of the product. The must undergoes a light static decantation and then undergoes alcoholic and malolactic fermentation spontaneously in stainless steel containers. Maturation takes place in stainless steel to preserve the freshness of the final sip and lasts 8-10 months. At the end of maturation, bottling takes place.

The French Chablis white wine made by the William Fevre winery announces itself to the eye with a straw-yellow hue. The olfactory profile revolves around variegated sensations, starting from fruity and spicy and reaching up to mentholated touches and hints of lime. On the palate, it is full-bodied, harmonious, with a sip marked by a taste that is savoury and fresh, endowed with excellent persistence. A label that pairs well with appetizers and first courses of fish and shellfish.
