Riesling 'Sassi e Sabbia' is a white wine that was born out of a desire on the part of the Giovanni Almondo winery to confront a grape variety that is not really part of the Piedmontese winemaking tradition. An interesting challenge led to this label's birth with a modern and youthful approach, where freshness and savouriness are well balanced on the palate, while the nose reveals a wealth of varied aromas, revealing the different souls of the vine and the terroir. It is a label that does its duty at the table with the more classic fish dishes and with recipes where it is white meat, cooked with light preparations that is the protagonist.
Sassi e Sabbia' is a Riesling made from grapes from the Giovanni Almondo winery on sandy, clayey, chalky and calcareous soils. We are located about 360 metres above sea level, in plots facing east. The must obtained from pressing the grapes is cold-macerated for about 12 hours and then fermented in steel containers. The ageing phase is carried out in cement vats for 8 months until the wine is ready for bottling.
Giovanni Almondo's Riesling 'Sassi e Sabbia' reveals itself visually with a typically straw-yellow colour. The olfactory spectrum is orchestrated around slightly citrusy and balsamic notes, from which also emerges a reference to the scent of aromatic herbs. It is medium-bodied and soft on the palate, with a mouthfeel endowed with a good balance of freshness and minerality. It ends with a finish characterised by a savoury aftertaste. A label with which Giovanni Almondo's winery leaves the panorama of classic Piedmontese whites to devote itself to an international grape that, in recent years, has been finding a place within the regional borders.
