Maria Adele Galanti founded her Ca' Boffenisio winery in the hilly town of Borgo Priolo, deep in the Oltrepò Pavese area. A cultured woman with great ambitions and originally from Sicily, she studied economics in Florence, travelled extensively, and learned to speak no less than four languages. She eventually fell in love with this small piece of land, hidden among the many farming villages in the province of Pavia. Since then, Maria Adele has tried to recreate her native land, cultivating her rows of vines using the traditional alberello system, which is often used in southern regions. With her great elegance and boundless passion, she has founded her winery on the quality that the Oltrepadano soil can express through its fruit. She is constantly trying to break out of the predetermined schemes and venture into new, unknown spaces, which she will know how to interpret in a new way.

Ca' Boffenisio represents a small piece of foreign soil in Italy. From an enological point of view, in fact, the main vines cultivated by the winery are Sauvignon, Chardonnay, Riesling, Pinot Noir, Cabernet Sauvignon, Franc and Merlot. The results obtained from this type of soil, which is characterised by a strong presence of limestone and clay, will clearly be completely new compared to those of their French counterparts. Moreover, the low anthropic impact system favours the "typicality" of these grapes, which are surrounded by uncontaminated woodlands. Alcoholic fermentation takes place in stainless steel tanks and, for some wines, is followed by malolactic fermentation in French oak barrels. Once the appropriate aromatic structure has been reached, the various final blends are made.

The reds and whites of Ca' Boffenisio all have clear mineral notes that are typical of the soils on which they grow. Borgo Priolo is a special place, in which Maria Adele Galanti wished to recreate a small Sicilian landscape. It was an immediate inspiration, not only because of the particular propensity to grow noble grapes such as Pinot Noir and similar, but also because of the extraordinary biodiversity that can be encountered. She allows flowers and plants to grow between her rows as ''the vineyard cannot be a living room'', and nature must have its own space. The winery's approach is precisely not to have an approach, letting coherence and passion point out the most beneficial way to wander through the vineyards.
