The Cesanese del Lazio ‘Collefurno’ represents one of the flagship labels of Carlo Noro, characterized by a spontaneous and elegant style. Carlo Noro is a reference point for biodynamic agriculture in Italy, where for over 30 years he has organized training courses both at his estate and in other locations across the country. Together with the producer Michele Lorenzetti, he founded the Cultural Association “Professione Biodinamica”, with the aim of teaching professional farmers and simple enthusiasts an effective method for working the land, and not only, according to the principles of biodynamics.
Carlo Noro Cesanese del Lazio ‘Collefurno’ is a 100% Cesanese di Affile grown on volcanic soils rich in clay, strictly following the dictates of biodynamic agriculture. Once ripe, the grapes are hand-picked, carefully selected, and then fermented in tonneau of multiple passes. In this type of winemaking vessel, the must ferments spontaneously, thanks to the action of indigenous yeasts, in contact with the skins for 18 days. The malolactic fermentation is also carried out spontaneously and the wine always matures in used tonneau for 10 months, followed by an additional 8 months of aging in bottle. Throughout the winemaking process, no enological additives are used and the mass is not subjected to any clarification or filtration.
The ‘Collefurno’ Cesanese del Lazio by Carlo Noro expresses a ruby red color with garnet reflections. Rustic and peculiar, the aromatic profile is defined by scents of red and black fruits such as blueberries and cherries, followed by hints of dried flowers and slightly spicy and vegetal notes. The taste is intense and structured, with a remarkable freshness that combines with soft tannins describing a persistent and elegant finish.
