The traditional French winery Jacquesson rightly belongs to the Olimpo of Champagne, a very exclusive and prestigious club that stands out for its elegant and complex wines. The Maison was founded by Mimme Jacquesson at the end of the 18th century in Dizy, north of Epernay, and was very successful from the start. Since the 1980s, the winery has been run by brothers Laurent and Jean-Harvé Chiquet, who have contributed significantly to the creation of a myth. One of the strokes of genius of the two brothers was the introduction of the "Cuvée 7**", based on a single declared vintage combined with reserve wines, following a transparent approach that aims to offer the purest manifestation of the terroir and the base vintage by offering a sans année always different.

The grapes processed by NM Jacquesson are Chardonnay, Pinot Noir and Meunier, varieties that are distributed between the Grand Cru villages of Avize and Oiry in the Côte des Blancs and Aÿ in the Vallée de la Marne, and the Premier Cru villages of Dizy and Hautvillers, also in the Vallée de la Marne. The soils are generally characterised by the chalky subsoil that is characteristic of Champagne, while the fundamentals of agricultural management are the absence of herbicides, low grape yields per hectare and harvesting at full maturity. All fermentation takes place in large oak barrels with full malolactic fermentation, and the masses remain in the wood to mature on the fine lees for about a year. A percentage of around 30-35% of vin de reserve is used to make the cuvées, and the mousse is carried out in bottle using the Champenoise method, with extended stays on the lees of up to 90 months. The final dosage is kept very low or excluded altogether so as not to impair the pure expression of the terroir. For the same reason, no clarification or filtration is used in the production of the sparkling wine base and the use of sulphites is reduced to the necessary minimum.

The production of the legendary Champenoise Jacquesson is divided into three sections: the Lieu-dits line, which comprises vintage Champagnes made exclusively from the best vintages, the already mentioned famous "Cuvée 7**" and the "Dégorgement Tardif" version of the same "Cuvée 7**". Regardless of the particular label, the "fil rouge" of Jacquesson's production is the "personality" of each bottle, which is lively and profound.
