The Sauvignon from Greywacke is a white wine with tropical and aromatic tones made in New Zealand from various vineyards from Marlborough and Wairau. Fermented with indigenous yeasts and briefly matured in steel and wood, it spreads tropical sensations of passion fruit and lime, with notes of canned peach, marzipan, and aromatic herbs. The sip has a good roundness and a pleasant freshness that makes it easy to drink and smooth.

In the New Zealand wine region of Marlborough, Greywacke's Sauvignon Blanc is born, a bottle with a fresh and exotic character. The grapes used to create this label come from the Southern Valleys and the central plains of Wairau, exactly within the areas of Woodbourne, Renwick, and Rapaura. The winery, founded in 2009 and run by the Judd family, is located in the Omaka Valley. All these areas are just a few kilometers apart but present different pedological characteristics.

Greywacke Sauvignon Blanc represents a pure expression of the homonymous variety of French origin, cultivated on heterogeneous soil compositions according to the principles of organic farming. In Rapaura and Renwick, the soils are of alluvial origin and have a great abundance of the characteristic greywacke rock, while in the Southern Valleys, the soils are clay-based. In the winery, the vinifications are parcel-based, with the bunches, harvested in the coolest hours of the night, being gently pressed. The musts obtained are cooled before the slow alcoholic fermentations in steel tanks. A portion of the masses are instead left to ferment in old oak barrels by indigenous yeasts. Once the fermentation processes are completed, the different batches are left to rest on the fine lees for a few months before blending and subsequent bottling.

The New Zealand Greywacke Sauvignon Blanc is straw yellow in color. The nose offers hints of tropical fruit, aromatic herbs, melon, peach, and citrus, accompanied by a fine mineral vein. Rich and enveloping on the palate, where the pronounced freshness leads the long finish with herbaceous and exotic notes, delicately aromatic. This is a Sauvignon Blanc that pairs exceptionally well with elaborate seafood dishes.
