The Syrah ‘The Cattle’ from the artisanal estate Proud Primary Produce is a full-bodied and flavorful red wine, produced in the Australian state of Victoria, specifically in Healesville, a few kilometers northwest of Melbourne. At the helm of this New World winery is Stuart Proud, a young winemaker who graduated from the University of Adelaide in 2001 and has accumulated winemaking experiences in Europe, North America, and, of course, Australia over the years. In 2016, Stuart launched the Proud Primary Produce project with the aim of creating pure and authentic expressions of the territory through a sustainable agronomic approach, while adopting a minimalist oenological philosophy in interventions.
Proud Primary Produce ‘The Cattle’ is a 100% Syrah from grapes grown in the Yarra Valley area according to the principles of organic farming. Here, the plants benefit from the particularly cool climate influenced by the sea breezes from the nearby Pacific Ocean. Following the harvest, the bunches are transferred to the winery where they have the alcoholic fermentation and malolactic fermentation, carried out respectively by indigenous yeasts and lactic acid bacteria. Subsequently, the wine is aged for 12 months in wooden barrels. Throughout the entire processing, no sulfites or other oenological additives are added.
In the glass, ‘The Cattle’ Syrah Proud Primary Produce displays a dark ruby red color. The nose offers rich and complex aromas of berries and ripe plum, combined with pleasant herbal and spicy hints. Broad and full on the palate, where the enveloping softness is well balanced by the decisive fresh-salty push that anticipates the lasting fruity returns.
