The Chablis “Saint Pierre” by Albert Pic is a white wine, mineral and with great potential produced in the Chablis area, which constitutes the northernmost part of the French Burgundy region. In this area, the continental climate combined with strong temperature variations and the peculiar characteristics of the soils, rich in marl and clay limestone with a subsoil characterized by the presence of marine fossils dating back over 145 million years, gives these wines a very distinctive mineral stamp. The “Saint Pierre” is made from pure Chardonnay grapes from vines trained using the Guyot method and located on the right bank of the Serein river. The winery, founded back in 1755, is the oldest reality in this region and is now owned by Baron Patrick de Ladoucette. Thanks to constant work in the vineyard and the selection of the best clones, Albert Pic has managed to maintain a strong connection with the territory, giving all its labels great typicity and expressiveness.
The “Saint Pierre” Chablis is obtained from grapes harvested exclusively by hand and carefully selected both in the vineyard and in the winery. The bunches brought to the winery are destemmed, crushed, and gently pressed to separate the pulp from the skins. At this point, the precise intention of the winery to characterize its products by enhancing what the territory is leads to the choice to carry out the alcoholic fermentation of this Chablis only in neutral steel or cement containers, as well as the subsequent aging, so as not to lose its vibrant freshness, almost nervous.
The Chablis “Saint Pierre” by Albert Pic presents itself with a very bright straw yellow color. On the nose, aromas of fresh fruit appear, including white peach and green apple, of exotic fruit, floral and citrus notes before opening up to iodine hints and notes of brioche bread. On the palate, it is pleasant and well-structured, with a well-balanced body and the great freshness that characterizes the finish.
