Domaine Cauvard's Volnay represents a complex and prestigious expression of one of the most important appellations for red wines in the Côte de Beaune. The Domaine Cauvard winery has officially been producing wine for three generations, currently managed by Julien Cauvard. However, the family's winemaking origins trace back much further, as the Cauvards are descendants of Simon Gagnerot, a winemaker who acquired his first vineyard as early as 1681. Today, the Domaine's production philosophy blends traditional practices with cutting-edge technologies to craft characterful wines that best represent the complex and prestigious terroir of the Côte de Beaune.
Domaine Cauvard's Volnay is made from pure Pinot Noir grapes grown using sustainable farming practices on soils rich in clay and limestone. Harvesting is done by hand, and the grapes are immediately transferred to the winery where they undergo maceration in stainless steel tanks for alcoholic fermentation with controlled temperature and skin contact. Complete malolactic fermentation follows, and the wine ages for several months in French oak barrels before final bottling with only light filtration to preserve the unique expression of the terroir.
Domaine Cauvard's Volnay has an intense and bright ruby red color. On the nose, it reveals pleasant fruity aromas of cherry, sour cherry, and raspberry, complemented by more complex notes of black pepper, licorice, and tobacco. The palate is dry and fresh, medium-bodied, with a velvety tannic structure and a persistent savory finish.
