'Rainbow Child' cider takes the form of one of the most original and articulate ciders from the Danish craft cider maker Aeblerov, resulting from a peculiar process that involves subjecting the liquid to a double maceration, the first with Solaris grapes and the second with elderflower. The production vision embraced by Morten Sylvest-Noer and his partner Christopher Melin involves the utmost respect for soil, crop and taste, operating in harmony with nature and its cycles without resorting to invasive interventions.

Aeblerov 'Rainbow Child' Cider originates from a combination of cider apples and apples of the Rød Aroma and Topaz varieties, fruits grown organically by local farmers. It is fermented using only indigenous yeasts, and the mass is macerated first with Solaris grapes and then with elderflower in order to enrich the cider with complex and distinctive aromas. This is followed by cold hopping with Citra hops before bottling, which is done without any filtration.

On visual examination Aeblerov's 'Rainbow Child' Cider expresses a golden yellow coloring tending to orange. The nose is vivid and fascinating in its hints of white-fleshed fruit, elderflower and citrus zest that combine with pleasant herbaceous nuances given by the hops. The flavor progression is thirst-quenching and juicy thanks to the bright freshness and fine effervescence. The recommendation is to indulge in this craft cider on its own as a refreshing aperitif, or at the table paired with fresh cheeses, light fish entrees or lightly seasoned cured meats.
