The Albariño ‘Coleccion’ Pazo Señorans is a Galician white wine that stands out for its aromatic fragrance and fine mineral vein. Among the wine producers of Rias Baixas, Pazo Señorans is one of those that is most committed to showcasing the exceptional potential of Albariño, vinified in various versions. According to some hypotheses, this white grape variety was spread in the 12th century in Pontevedra, Galicia, by Cluniac monks. Other theories suggest that the grapevine actually originated in this region of the Iberian northwest, of which it has become the symbolic grape.
Pazo Señorans ‘Colleccion’ Albariño is made from only grapes of the same variety, grown on characteristic pergola systems in the Valle di Salnes, where the plants enjoy the cool oceanic climate and the subsoil rich in xabre, granitic rock with excellent draining properties. The harvest is done by hand and subsequently the bunches are vinified in stainless steel tanks at controlled temperature. The resulting maturation period lasts 6 months, during which the mass rests on the fine lees, always in steel. Once bottled, the wine spends a full 30 months in glass before being released on the market, which occurs in limited quantities.
The Galician Albariño Pazo Señorans ‘Colleccion’ has a brilliant straw-yellow hue. The olfactory spectrum plays on intense and articulated aromas of lemon and peach, combined with balsamic hints and sweet notes of white flowers. Fresh and mineral on the palate, with a very long savory trail that leads to a finish of remarkable taste-olfactory correspondence.
