The Alta Langa Extra Brut by Monsignore is an interesting sparkling wine from the surroundings of Mondovì, with vineyards located on an ancient property of the local bishop. The blend is perfectly divided between Pinot Noir and Chardonnay, a choice driven by the desire for balance. On the nose, one perceives hints of ripe white fruit and pastry, but the distinctive mark is a pleasant herbaceous profile. On the palate, it is creamy and enveloping, with a clear, elegant, and persistent freshness. It pairs perfectly with Piedmontese appetizers like vitello tonnato.
