Domaine Cauvard's ‘Clos Maladiere’ is a soft and fresh Beaune Blanc from pure Chardonnay grapes. Produced in Burgundy on clay and limestone soils, this white wine matures in oak barrels, taking on pleasant hints of honey and cinnamon. The Beaune Blanc ‘Clos de la Maladière’ from Domaine Cauvard is a Burgundy Chardonnay with absolutely unique characteristics, being an expression of a so-called “monopole.” This French term is used in viticulture to identify those crus cultivated exclusively by a single Domaine, in this case, the ‘Clos de la Maladière’ vineyard of Domaine Cauvard. This parcel is located just north of the town of Beaune, not far from the border with the territory of Savigny-les-Beaune, and is the only one separated from the block of other climats of the AOC Beaune.
The ‘Clos de la Maladière’ Domaine Cauvard Beaune Blanc is made from pure Chardonnay grapes cultivated sustainably on clay and limestone-rich soils. Once the grapes reach the right stage of ripeness, they are hand-harvested, followed by gentle pressing and then alcoholic fermentation of the must in oak barrels. The liquid then matures on the lees in these same barrels for several months, during which periodic batonnage is performed to keep the fine lees in suspension. The wine is finally bottled after a light filtration.
The ‘Clos de la Maladière’ Beaune Blanc from Domaine Cauvard has a golden yellow color with greenish reflections. The aromatic profile includes notes of yellow-fleshed fruit, hawthorn, honey, cinnamon, and dried fruits like almonds. The taste development is elegant and harmonious, perfectly balancing glyceric softness and bright freshness, with a persistently sapid-mineral finish. This Chardonnay pairs exceptionally well with refined dishes based on flavorful fish such as swordfish and salmon, or with white meats like rabbit or chicken.
