The Bourgogne Blanc ‘Le Combe’ by Joseph Colin is a clean and approachable Chardonnay that represents an excellent starting point to know and appreciate the great whites of the Cote de Beaune and the stylistic signature of this talented vigneron. This label represents a regional appellation, a designation that allows the blending of grapes grown within different municipalities and, often, within different areas. The French term “combe” means “comba”, a word that indicates a narrow and elongated gorge similar to a canyon. These formations are quite common in Burgundy, where they carry water and debris influencing the pedoclimatic characteristics of the different parcels.
Joseph Colin ‘Le Combe’ Bourgogne Blanc is made from pure Chardonnay grapes, sourced from vineyards cultivated according to the principles of organic and biodynamic agriculture. The harvest is done entirely by hand, and the bunches are then transferred to the winery for gentle pressing. The must obtained undergoes spontaneous alcoholic fermentation in stainless steel tanks, where it also completes the subsequent aging of a few months before bottling.
Graceful and pure is the straw yellow color of the ‘Le Combe’ Joseph Colin Bourgogne Blanc. On the nose, crisp and fresh notes of green apple, lime, and grapefruit alternate with mineral sensations and white flowers. The entry on the palate is clear and clean, characterized by notable freshness and marked minerality. A subtle and spontaneous expression, capable of introducing the fascinating and complex world of Burgundy Chardonnay. For its immediacy and liveliness, this bottle is the ideal accompaniment to fish dishes and local appetizers, such as the popular escargots de bourgogne, delicious land snails cooked with butter and parsley.
