The Bourgogne Blanc “Neige de Printemps” by Domaine Ami is a lively and complex Chardonnay, made from grapes harvested near the famous municipality of Puligny-Montrachet. The two friends Willy and Paul work to express the territory of Burgundy with genuineness, working with artisanal care, both in the vineyard and in the cellar. On the nose, lemon, orange, and iodized notes are perceived on the finish. On the palate, it is fresh, lively, but thanks to the aging on fine lees in wood also presents a creamy character, with sensations of butter and the finish is truly persistent 

The Bourgogne Blanc ‘Neige de Printemps’ from Domaine Ami is a pure Chardonnay that highlights a tense and fascinating character. The production philosophy pursued by friends Paul Marchand and Willy Roulendes excludes any enological artifice, including the use of selected yeasts, additives, and even sulfur, when the vintage allows it. The two cultivate a few hectares independently and purchase the rest of the grapes from small local producers who work strictly organically. The expression “tete dans les nuages” literally means “head in the clouds.”

Domaine Ami ‘Neige de Printemps’ Bourgogne Blanc is a 100% Chardonnay whose grapes come partly from a plot located between the municipalities of Puligny-Montrachet and Chassagne-Montrachet and partly from a vineyard situated in Maranges. Both soils are rich in clay, sand, and limestone, and the vines are grown under organic farming practices. The manual harvest is followed by gentle pressing of whole clusters, with the must undergoing a slow alcoholic fermentation operated exclusively by indigenous yeasts in old Bordeaux barrels, which lasts until the following spring. The maturation phase also takes place in oak barrels and lasts a few months. Throughout the processing, the mass is not subjected to any clarification or filtration.

The ‘Neige de Printemps’ Bourgogne Blanc from Domaine Ami has a straw yellow color with golden reflections. Aromas of fruit, white flowers, and citrus, such as lemon and orange, overlap on the nose, combined with mineral notes and dried fruit. A balanced, articulated, and creamy sip, with pronounced freshness that anticipates a savory and very persistent finish.
