The Bourgogne ‘PasseToutGrains’ from Domaine Castagnier represents a refined blend of the Burgundy grape varieties Pinot Noir and Gamay that is appreciated for its juicy and dynamic taste, an authentic expression of the territory. Jérôme Castagnier is the fifth generation of winemakers leading the family Domaine, winner for two consecutive editions of the prestigious award “Young Talent of Burgundy”. His production philosophy is based on values such as sustainability and non-interventionist winemaking, all to express the purest face of the prestigious Burgundy territory.
The ‘PasseToutGrains’ Bourgogne Domaine Castagnier is crafted from a blend of the traditional Burgundy varieties Pinot Noir and Gamay, sourced from a single plot located in the municipality of Morey, within the prestigious Côte de Nuits area. The vines benefit from the organic and biodynamic farming applied by Jérôme, as well as the clay-limestone matrix of the soils. Following the manual harvest,accompanied by a careful selection of the grapes, the bunches are vinified in red through spontaneous alcoholic fermentation in wood in contact with the skins. The subsequent aging phase lasts for 12 months and takes place in oak barrels until the final bottling, carried out without any prior clarification or filtration.
In visual examination, the Bourgogne Domaine Castagnier ‘PasseToutGrains’ expresses a light ruby red color. The alluring olfactory panorama is defined by fruity aromas of blueberry and cherry that blend with sensations of violet and underbrush. Pleasant spicy tones in the background.
