“Meunier” by Apollonis is the interesting pure interpretation of the emblematic variety of the Vallée de la Marne, the Meunier. This label represents a dedication to previous generations by Michel Loriot, the winemaker currently at the helm of the family winery: a Champagne prepared according to the working method that his grandfather Germain followed in the 1930s. His contagious passion for music is also remembered by including the cuvée in the “Sensations Vibratoires” collection: the Meunier vines benefit from listening to classical music in the vineyard, so that their resistance to adversity is naturally stimulated and subsequently in the cellar the wine evolves cradled by the notes of classical authors such as Brahms, Vivaldi, Elgar, whose vibrations reach all components of the structure favoring the complete expression of aromas and flavors.

After the complete malo-lactic fermentation, the blending is done with 50% of reserve wines, aged using the Solera method, and then bottling for the sparkling process and re-fermentation in the bottle. The Champagne rests on its lees for 24 months, followed by the operations of disgorgement and dosage that fixes the sugar residue at 9 grams per liter.

“Meunier” from the domaine Apollonis excellently represents the Meunier from the Festigny area, according to Michel Loriot's intentions. The appearance is bright, with fine and persistent effervescence dressed in a beautiful golden yellow. The aromas evoke joyful sunny days, with clear hints of ripe fruit such as pear and melon, accompanied by a rounder note of butter.
