Chassagne-Montrachet is a refined and rounded white wine from the prestigious Premier Cru of the Cote de Beaune in Burgundy. Matured for at least 18 months in barrels, it takes on a profile of great elegance and class, with a soft, full and voluminous sip, supported by a clear mineral freshness and accompanied by notes of sweet spices, butter, vanilla, yellow flowers, citrus zest and wet stone

The Chassagne-Montrachet Premier Cru ‘Les Baudines’ from the renowned producer Pierre-Yves Colin-Morey is a Chardonnay capable of expressing the highest quality levels of Burgundy whites thanks to its broad complexity and expressive refinement. The vigneron Pierre-Yves Colin undoubtedly represents one of the foremost interpreters of the Chassagne Montrachet territory, in the Côte de Beaune, the homeland of great Chardonnays. Here, the producer embarked on his winemaking adventure in the early 2000s together with his wife Caroline Morey, leaving the family estate as is customary in Burgundy and establishing himself immediately for the exceptional quality of his wines.

Pierre-Yves Colin-Morey ‘Les Baudines’ Chassagne-Montrachet Premier Cru is a pure Chardonnay from vines located within the climat of Les Baudines, situated in the northwestern extremity of the Chassagne-Montrachet area, bordering Santenay. The soil consists of clay and limestone while the altitude exceeds 300 meters above sea level.sea. When the grapes have reached ideal ripeness, manual harvesting and soft pressing of the bunches take place. This is followed by the alcoholic fermentation of the must and aging for over a year in French oak barrels of 350 liters, larger than the traditional Burgundy pièces of 228 liters. During the maturation period, no batonnage operations are performed.

The ‘Les Baudines’ Chassagne-Montrachet Premier Cru by Pierre-Yves Colin-Morey has a straw-yellow color with brilliant golden reflections. The varied aromatic profile carries with it scents of yellow apple, citrus zest, summer fruit, white flowers, and aromatic herbs. Hints of pastry and refined mineral notes complete the olfactory context. Full and broad on the palate, shaped by prominent freshness and a lasting savory-mineral trail in a progression of sublime harmony.
