Erba Salata is a frank and bucolic red wine produced by Andrea Ugolotti from red grapes harvested near the winery. The limited hectares of land are caressed by winds from the Apennines and breezes rising from the sea. A micro-winery where, for a few years now, Andrea and his partner Daniela have been at the helm, dedicating themselves to the vineyard and winemaking with a very sensitive approach to nature. Only typical grape varieties grow in the colourful and diverse nature of the vineyards, allowing them to obtain a red wine with a unique character that best expresses the characteristics of the terroir.
The 'Erba Salata' wine from the Colle Florido winery is a red wine made from grapes grown in full respect of nature and without the use of chemicals or synthetic substances. Andrea Ugolotti's goal is to let the grapes grow in the full naturalness of their cycle without invading the vineyards with human impact and respecting the timing and characteristics of each individual vintage. Thanks to the presence of a multitude of plant species, the soil is perfect for wine production. In particular, the presence of Erba Salata, a wild carrot that grows abundantly in August between the rows, provides the right amount of aeration and drainage to the soil, which therefore does not require any human intervention. The grapes are also harvested by hand, then destemmed and not pressed in any way. Instead, it is the fall and long maceration that gently break the berries, releasing their juice. Spontaneous fermentation, combined with maceration on the skins, takes place in old oak barrels and steel vats.
Colle Florido 'Erba Salata' has a beautiful intense ruby red colour, deep, impenetrable and with violet reflections. The nose is pleasantly rustic and earthy, breathing the nuances of the local nature, revealing spicy, fruity and wild flower notes that make the bouquet rich and intense. The palate is energetic and lively, exploding with a marked freshness and a pleasant rustic juiciness. As the minutes pass, hints of bitterness and aromatic herbs also emerge. This is not a wine for everyone, but for those who want to discover the artisanal essence of a wine made in the traditional way.
