Paternoster's Falanghina 'Vulcanico' comes from vineyards at the foot of Vulture and embodies the energy and minerality of the volcano. Maturation in steel allows great freshness and fragrance to develop, but a few months' rest on the lees gives structure and complexity. Small white flowers, pear and hints of citrus entice the sip, fresh and balanced, with a very clean and refreshing finish. Perfect with hors d'oeuvres, vegetables or fish, try it with 'acquasale' or salt cod
