The Fiano “Zin” by Cantina Produttori di Manduria is a fresh and intense white wine produced in Puglia from Fiano grapes with a small percentage of Minutolo, a semi-aromatic local variety that has been rediscovered and enhanced in recent years for its distinctive characteristics. Vinification exclusively in stainless steel highlights the citrus freshness of Fiano and its elegant, floral and fruity profile, made softer and broader by the aromatic notes of Minutolo. The palate is harmonious, pleasantly fruity and well balanced.
“Zin” also allows us to discover Puglia’s white-wine soul, a region better known for its great reds made from Primitivo and Negroamaro. Across its more than 900 hectares of vineyards, the Cantina Produttori di Manduria also cultivates historic white varieties from the Tavoliere plain, particularly Fiano—originally from neighboring Campania—and Minutolo, a lightly aromatic grape native to Puglia. The vines are around 20 years old, and the most common training system is the vertical trellis (spalliera). The presence of numerous parcels spread across different areas allows the winery each year to select the best grapes and consistently produce high-quality wines. Fermentation takes place in stainless steel tanks at a controlled temperature of 18 °C, and the wine matures for several months in steel before bottling, in order to preserve the full aromatic character of the grapes without any influence from oak.
Thanks to the presence of Minutolo, the white “Zin” offers a version of Fiano with distinctive territorial nuances, making it a truly characterful Apulian wine. In the glass, it shows a bright straw yellow color with greenish highlights. On the nose, it opens with delicate aromas of orange blossom, hawthorn and white flowers, followed by notes of cedar, white-fleshed fruit, soft tropical hints of passion fruit and lychee, and subtle nuances of Mediterranean herbs. The palate is taut and vibrantly fresh, unfolding into more harmonious, rich and expansive fruit flavors before closing on savory notes.
