Il Monte Caro's Garganega 'Il Biondo' is an essential, light and territorial white wine. It is vinified in such a way as to generate a very slight effervescence, making it more lively on the palate. Fermentation and ageing exclusively in steel for eight months preserve the aromatic integrity and varietal freshness, maintaining a direct and spontaneous profile. The nose reveals white flowers and delicate fruit, while the palate is smooth, fresh and linear. It pairs well with fish and vegetable dishes such as courgette risotto.
