It is produced by the company Del Buen Agave, which brings together a group of producers who have decided to share the experiences and knowledge passed down from generation to generation over the centuries, to enhance one of the symbolic products of Mexico. The Artesanal Espadin Palomo is a Mezcal offered by a brand that has quickly established itself, first in the local market and then internationally, thanks to a range of impeccable, elegant, and refined distillates. Del Buen Agave is located in Santiago Matatlán, in the state of Oaxaca, in an area that has always been considered among the most famous for Mezcal production. It is made only with agave of the prized espadin variety, which is cut when it is at least 9 years old, at the peak of its maturity. Once all the leaves of the agave are removed, the heart of the plant is slowly cooked in traditional brick ovens. The pulp is then ground and fermented with the addition of water. Finally, the juice is sent to the double distillation process in traditional copper stills, under the watchful eye of the master mescalero Carlos Mendez Blas, who ensures its absolute purity and aromatic richness.
