The Bianco Anfora by Casa Belfi is a sparkling white wine characterized by the almost ancestral use of clay containers as fermentation vessels. This production choice is pursued by the winery for environmental reasons and the expressive essentiality of the wine.
The white grapes that make up this wine come from vineyards located on medium-textured soils, with a pebbly and well-draining substrate. The philosophy pursued is both biodynamic and certified organic. The grapes are destemmed and placed in large terracotta amphorae. The container is active, not inert, and interacts with the wine mass imparting certain characteristics that will reveal themselves upon tasting. Inside the amphora, there is a maceration on the skins for about 7 days, followed by a soft pressing and fermentation will begin through only indigenous yeasts, without temperature control. It is bottled on flower days, according to the lunar calendar of Maria Thun, and undergoes a secondary fermentation in the bottle.It is not dosed, nor filtered, nor clarified.
The Bianco Anfora appears in the glass as a very deep straw yellow, with a subtle effervescence. On the nose, rich, intense, and slightly iodized aromas emerge, of yellow fruit and citrus balanced by hints of bread crust. On the palate it is vibrant, rough, typical of maceration, but with great balance. There is an excellent structure and the mineral sensation, due to the active contact with the amphora, softens and does not sting, providing pleasantness. The sediment ensures longevity and softness to the wine.
