The Fiol Prosecco Brut is a more straightforward yet enjoyable version just like the Extra Dry version. Everything revolves around the number 8: eight are the weeks of refermentation, 8 grams of sugar, and eight the percentage of Pinot added. It is vinified with a small percentage of Pinot Noir, vinified in white to maintain the clear and bright color. On the nose, there are hints of white flowers, yellow fruit, notes of pear, and subtle almond hints. The sip is creamy, velvety, and light. Pleasant as a choice for an aperitif, but also excellent for drier sparkling cocktails.
