This Brut “Mattia Vezzola” is a Metodo Classico sparkling wine that is made from pure Chardonnay grapes. This international grape variety is cultivated in the most vocated areas of the Lakes of Garda and Iseo, within parcels characterized by a gravelly and calcareous subsoil, exposed to the south and southeast. The first fermentation of the must takes place both in steel containers and – for 35% of the mass – in small barrels of white oak, resting on the lees for 8 months. The second fermentation then occurs in the bottle, following the production principles of the Metodo Classico. The sparkling wine remains to mature on the lees in the bottle for 24 months, until the disgorging, dosage, and bottling procedures begin.
The Spumante Metodo Classico Brut “Mattia Vezzola” Costaripa presents itself with a straw yellow color, crossed by a line of fine bubbles with good persistence. The nose is concentrated and subtle at the same time, with fruity touches and notes of aromatic herbs, interspersed with hints of honey and bread crust. On the palate, it has a medium body, with a velvety sip characterized by refined sapidity. A label that will brighten your most elegant aperitifs, also offering you the opportunity to continue serving it at dinner, paired with recipes where fish is the protagonist.
