The Brut Blanc de Blancs by Mazzolino is a Spumante Metodo Classico with a clear and fragrant bouquet of aromas, a prelude to a dynamic sip, where the perlage is lively and delights the mouth with elegance, without presenting a grain that is too coarse. A pure Chardonnay where nothing seems out of place, which testifies how the winery of Oltrepò Pavese Mazzolino is a master in interpreting the bubbles that have made this territory famous over the last few decades.
This Blanc de Blancs Metodo Classico is born from the pure use of an international grape variety particularly suited to show itself in the guise of bubbles, Chardonnay. Mazzolino cultivates this variety on hilly soils, characterized by a subsoil composed of clay and silt, located at an altitude between 180 and 220 meters above sea level. After a gentle pressing of the grapes, the must ferments for the first time in steel, then referments in the bottle according to the production process of the Metodo Classico. The Spumante remains >on the lees for 36 months, and at the end of this period, the operations of disgorging, dosage, and bottling are carried out.
The Spumante Brut Blanc de Blancs Mazzolino reveals itself to the eye with a soul of straw yellow color, crossed by a fine bubble, endowed with good persistence. The nose is crisp, enveloped by pleasant citrus and floral notes, from which hints of yeast and pastry can also be glimpsed. On the palate, it is medium-bodied, refreshing, with a sip characterized by a savory trail, always in balance. An excellently crafted bubble, whose body is well suited to accompany the entire meal, especially in combination with exquisite dishes based on fish and seafood.
