The Rosé Metodo Classico Spumante Extra Brut ‘60’ from Casa Caterina is a wine that stands out for its complexity and finesse. Although it falls within the DOCG Franciacorta, the family-run sparkling wine reality Casa Caterina has chosen, since the 1990s, not to have its products represented by any denomination, as the agronomic and enological work applied by the Del Bono family goes well beyond the requirements of the regulations. A limited production of the highest quality, where the Metodo Classico, crafted with meticulous care but without excessive and intrusive interventions, represent the pride of the winery.

Casa Caterina Spumante Metodo Classico Rosé Extra Brut ‘60’ comes from grapes cultivated under biodynamic practices on clay-limestone soils. After manual harvesting and careful selection, the bunches are vinified in rosé, with the first alcoholic fermentation carried out spontaneously for 90% of the mass in steel containers and for the remaining part in oak barrels. The sparkling base thus obtained is therefore placed in the bottle for the tirage according to the Metodo Champenoise. 

To the eye, the Casa Caterina ‘60’ Rosé Extra Brut Spumante Metodo Classico reveals a captivating intense pink color, with fine and persistent perlage. The nose evokes fragrant and articulated hints of pomegranate, red berry fruits, and mallow flowers, enriched by notes of small pastries. The taste shows determination and full body, as well as great balance between the rich creaminess and the fresh-salty push that lead to a long and elegant finish. Thanks to its character, this bubbly is configured as a gastronomic wine to pair with various pastas and risottos.
