Syrah Casale Certosa 2022
The Syrah from Casale Certosa is a red wine from certified organic farming originating from Lazio. In the winery, it undergoes spontaneous fermentation and aging of at least 16 months in steel; finally, it is bottled, usually 18 months after the harvest. This Syrah presents a ruby red color to the eye, while on the nose, it expresses delicate but persistent aromas of berries, black pepper, and violet. On the palate, it remains dry and soft. It pairs well with white meats, first courses of Mediterranean cuisine, and cold cuts and cheeses.
The Syrah from Casale Certosa is a red wine characterized by the typical peppery aromas of the grape variety, processed entirely in steel to enhance its peculiar varietal characteristics. Lazio is a region with a very ancient winemaking history that represented the meeting ground between the viticulture of Magna Graecia and that of the Etruscans. The Romans were great wine enthusiasts, as evidenced by the numerous treaties on the subject written by great Latin authors. Today, the region, in addition to hosting countless native and traditional varieties, is home to international grape varieties. Among these, Syrah occupies a prominent place, being one of the most cultivated grapes in the area.
The Syrah Casale Certosa is made from pure Syrah grapes grown according to the principles of certified organic farming and biodynamics on volcanic soils. After the harvest, carried out when the grapes have reached optimal ripeness, the bunches are destemmed and crushed in stainless steel tanks, where alcoholic fermentation occurs spontaneously in contact with the skins. It follows the pressing and the removal of coarse lees after 24-36 hours, with the wine then aging for about 16-18 months on fine lees always in steel.
The Syrah from the Lazio winery Casale Certosa is ruby red in color with purple hues. The nose offers vivid fruity and floral aromas of sour cherry, red plum, and violet, enriched by spicy hints of black pepper. On the palate, it is dry and soft, with a delicate tannic structure anticipating the persistent fruity finish. A Syrah from Lazio that pairs perfectly with grilled meat, particularly lamb or pork.
