Valdisole's 'Aura' is a non-orange white wine that is macerated 'a cappello sommerso' for a good eight months. Fresh, intense and mineral, it is a rarity and a sought-after choice to impress diners. The aromas that strike the palate range from honey, to citrus fruits, passing through wisteria and finally reaching musk and sage. A classy wine to drink as an aperitif with a platter of cold meats and cheeses, but also with a good seafood risotto

Through its gentle aromatic nature, the white macerated wine Valdisole ‘Aura’ is capable of leaving a lasting impression in the mind and senses like a floral caress. Among the varieties cultivated by the Roero estate Valdisole is the Moscato Bianco, one of the most popular and important grape varieties of Lower Piemonte. Although this grape is traditionally vinified in a sweet, often sparkling version, it is also suitable for being processed to produce dry or macerated white wines, thus showing an excellent enological plasticity. The Moscato Bianco belongs to the vast family of Moscati, among the oldest varieties known and appreciated since ancient times by the Greeks and Romans.

Valdisole ‘Aura’ is made from grapes of a single aromatic white grape variety grown without the use of synthetic chemical products, such as pesticides, herbicides, and phytopharmaceuticals, on soils composed of clay, sand, and limestone. After the harvest, which is carried out entirely by hand, the bunches are subjected to crushing and destemming, followed by spontaneous alcoholic fermentation.spontaneous, associated with a very long maceration of 8 months with submerged cap in stainless steel tanks. Throughout the entire production process, the mass undergoes no clarification or filtration and the use of additives and enological aids is banned, except for minimal doses of sulfites at bottling, when the wine requires it.

The white macerated wine ‘Aura’ by Valdisole has a straw yellow color with golden reflections. On the nose, inviting aromatic hints of lemon, orange peel, honey, quince, wisteria, moss, and sage are perceived. Dry and intense is the progression on the palate, characterized by excellent freshness and a sharp savory-mineral character, as well as a very slight tannic sensation that accompanies the aromatic notes on the finish.
