This Saint Joseph White by Hervé Souhaut comes from the Domaine Romaneaux Destezet, which specialises in working with a real viticultural treasure, namely 100-year-old vines facing the prestigious Hermitage hill. It is a blend of Viognier and Roussanne, cultivated using biodynamic methods, undergoing spontaneous vinification and one year of ageing on fine lees. The nose is complex, with white flowers, typical hints of peach and beeswax and an iodine finish. In the mouth it reveals a creamy structure, surprising length of sip, very fresh. Try it with typical dishes such as 'quennelle de brochet', a pike fish based dish
