The Croatina grapes, to which a pinch of Barbera is added, are cultivated according to organic practices, and, after the harvest, they ferment in steel at controlled temperature thanks to the use of indigenous yeasts, macerating briefly but intensely. They then undergo refermentation in autoclave, from which the sparkling effect is obtained, followed by bottling.
