Francesco Cadinu presents the ‘Ghirada Fittiloghe’, the flagship label of this natural producer who has quickly carved out a space for himself in the Olympus of Sardinian wineries. The fact that to win over enthusiasts and wine critics he did not compromise, but instead chose to enhance the long and historic winemaking tradition of Mamoiada, represents another point in favor of this family-run production reality. The grapes for the creation of this fine red wine come exclusively from the oldest vineyard (‘Ghirada’), which consists of vines over 120 years old and is located in the area of ‘Fittiloghe’, a Sardinian word that means ‘place of vines’.
The ‘Ghirada Fittiloghe’ by Francesco Cadinu represents a pure Cannonau, whose grapes come from a vineyard over 120 years old, trained as bush vines on decomposing granite soils, at an altitude of 700 meters. The yields are minimal and plowing is done using oxen. In the winery, alcoholic fermentation and malolactic fermentation take place spontaneously in small wooden vats, without temperature control and with about 15 days of maceration on the skins. The subsequent aging phase occurs in small chestnut barrels for 15 months.
In the glass, the Cannonau Francesco Cadinu ‘Ghirada Fittiloghe’ displays an intense ruby red color. The olfactory profile emerges vivid and articulated, painted with aromas of ripe berries accompanied by balsamic, floral, and spicy descriptors. On the palate, it shows itself to be bold and full, with a warm roundness that balances with the fresh-salty push and the melting tannin.
