Champagne Brut "Cuvée Louise" is the result of the successful combination of two highly complementary international grape varieties, Chardonnay and Pinot Noir, cultivated by the Pommery maison in the Grand Cru vineyards of Avize, Cremant and Ay. The grapes, carefully selected during the harvest to ensure only the best of the terroir of origin, undergo alcoholic fermentation in steel, as well as malolactic fermentation. The best cuvées are then selected and blended, and finally the wine undergoes a second fermentation in the bottle, following the rules of the Champenoise method. At this point, the Champagne is left to mature on the lees for a full 120 months, after which it is disgorged and bottled.
Pommery's "Cuvée Louise" is a Brut Champagne that has a typical straw colour in the glass; the perlage is very fine-grained, with a very long finish. The bouquet of aromas that envelops the nose has layered and rich notes, which start with a sensation of citrus fruits and tend towards floral nuances and hints reminiscent of pastries. On the palate, it has excellent body, is velvety and creamy, almost chewable thanks to its enveloping mouthfeel, with excellent progression on the finish.
