The Champagne Brut "Le Blanc de Blancs" from the renowned French winery Ayala is an extremely refined sparkling wine made solely from Chardonnay grapes harvested in the famous Côte des Blancs. The long aging of 6 years on its own lees ensures an excellent-bodied label with a strong character. The color is golden yellow with bright reflections that accompany a very fine and persistent perlage, with notes of ripe white-fleshed fruit, orange blossoms, and acacia honey on the nose. The sip is fresh, mineral, creamy, enveloping, and with an extremely long finish.

The Champagne Brut “Le Blanc de Blancs” from the famous Maison Ayala represents the iconic label of an elegantly fine style, which finds a perfect expression in an extraordinary pure Chardonnay. It is a Vintage produced only in a limited number of bottles and in the best years, to enhance the character of the grapes from the prestigious Grand Cru of the Côte des Blancs. Champagne of exceptional purity, fresh and mineral, with characteristic chalky nuances of the terroir, it is ideal to taste with seafood pasta dishes, baked fish, or delicate white meats.

The “Le Blanc de Blancs” is a Champagne Brut produced by the famous Maison Ayala. It is a symbolic cuvée of the prestigious range of Ayala labels, created by Chef de Cave Caroline Latrive to highlight the extraordinary qualities of the best Chardonnays from the domaine. The grapes come only from the Grand Cru plots of the Côte des Blancs in: Chouilly, Cramant, Mesnil-sur-Oger, Cuis, Grauves. At the end of the manual harvest, the ripest and healthiest bunches are vinified separately for each individual parcel, with a gentle pressing, followed by a vinification of the must in steel. After a few months, the blending of the vins clairs takes place to create the final cuvée. The second fermentation occurs in the bottle according to the Méthode Champenoise, with a period of aging on the lees of six years before proceeding to disgorgement.

The Millesimato Brut "Le Blanc de Blancs" by Ayala is a prestigious Champagne, a special bottle created to enhance the excellent quality of the grapes and the extraordinary character of the vintage. In the glass, it presents a brilliant and intense golden yellow, with a very persistent perlage that rises delicately and finely. The bouquet expresses all the finesse of a great Chardonnay, with aromas of white flowers, orange blossom, lemon zest, cedar, grapefruit, notes of white-fleshed fruits, Williams pear, peach, enveloping sensations of pastry, a hint of dried fruit, and saline memories. On the palate, it is clear and lively, with a agile and flowing sip that leads to a finish of vibrant mineral freshness.
