The Champagne Extra Brut "Bulles de Comptoir #12" by Charles Dufour is a label that originates from a small family-run Maison located in the Côte des Bar, the southernmost area of the Champagne region. It is a cuvée primarily based on Pinot Noir, completed with Chardonnay and Pinot Blanc, which expresses a good structure and great aromatic richness, also thanks to the use of wooden aging. This label is very interesting for those who love to discover the excellences of small vignerons, who still work with care and artisanal passion.
The Extra Brut "Bulles de Comptoir #12" is a Champagne born from the desire to enhance the heritage of a small family domaine. Charles Dufour cultivates 6 hectares of vineyard in the heart of the Aube, in the municipalities of Landreville, Celles-sur-Ounce, and Essoyes. In the countryside, he has chosen for years to abandon chemicals, following the principles of organic farming and using only sulfur, copper, or biodynamic preparations. At the base of his labels is of excellent Pinot Noir, the true flagship grape of the Côte des Bar, which forms the backbone of the wine, softened by the elegance of Chardonnay and Pinot Blanc. After the gentle pressing of the grapes, the fermentations take place in oak barrels using only indigenous yeasts. The base wines are then blended and the second fermentation in the bottle is carried out according to the Champenoise Method.
The "Bulles de Comptoir #12" is a Champagne that very well represents its area of origin, characterized by Kimmeridgian clay-limestone marls, particularly suitable for the cultivation of Pinot Noir. The natural approach to winemaking allows for the creation of a Champagne with a genuine and authentic character and an intense and decisive flavor. In the glass, it presents a lively straw-yellow color, with a fine and continuous perlage. The wooden aging gives rich and mature aromas, with fragrant fruity notes and hints of bread crust.
