Math is not an opinion: the maison Bruno Paillard, after having this Brut Champagne remain to age on the lees for 3 years, decides to let it rest further in the bottle for another 36 months, so as to bring to 72 the total months necessary to be able to taste this "Cuvée 72." Here is unveiled the origin of the name of this label, which thus makes it clear that we are faced with a complex product, in which the aromas tell a slow maturation, and where the drinking is satisfying thanks to a creamy and dense mousse. A bubble that is really hard to resist, dedicated to all those who love evolved Champagnes.

Bruno Paillard produces this Brut "Cuvée 72" from a blend where all three grape varieties that have made Champagne famous in the world, Chardonnay, Pinot Noir and Pinot Meunier, are present. The grapes are cultivated with great care, and, after the first fermentation, carry out the second refermentation in the bottle according to the principles of the Metodo Classico, remaining on the lees for 36 months. After disgorging operations, the wine matures further for another 36 months, directly in glass, before being released for sale.

This "Cuvée 72" is a Brut Champagne that, in the glass, announces itself with a festive and fine perlage, very persistent; the color is straw yellow, with slight nuances tending to gold. A delicate symphony resonates on the nose, where floral and fruity sensations are enhanced by touches of yeast and bread crust. On the palate it is subtle, sensual, with a satisfying body that is decidedly balanced and leverages a fresh sip.
