The Champagne Extra Brut BdN "Bistrotage B.17" by Charles Dufour is an expressive and powerful Blanc de Noirs, an iconic cuvée celebrating the transition to artisanal management by the producer. After 24 months in wood and about 60 months in bottle on the lees, we find ourselves in front of a sparkling wine of great intensity. On the nose, the typical notes of cooked apple are combined with intriguing hints of figs, then almonds and hints of sugar cooked on the finish. The strength of the bubbles at the entrance to the mouth is surprising, then a pleasant creaminess entices the sip, fresh and savory on the finish. You can relish it alongside a mixed dish of fish, crustaceans and molluscs 

Charles Dufour presents the Champagne Blanc de Noirs ‘Bistrotage B.20’ Extra Brut, an artisanal sparkling wine outside the classic norms of Champagne. This Blanc de Noirs comes from the Aube region, located in the southern part of the area. “Bistrøtage” is the name of the line that Charles vinifies with grapes from his mother Françoise Martinot and is characterized by its great gastronomic inclination.

The ‘Bistrotage B.20’ Champagne Blanc de Noirs Extra Brut from vigneron RM Charles Dufour is a 100% Pinot Noir grown on clay-limestone soils in the Cote des Bar following organic farming principles. The manual harvest is followed by the creation of the sparkling base through spontaneous alcoholic fermentation of the must, half in steel tanks and half in wooden vats. Aging takes place entirely in oak barrels for a full 24 months. At this point, the vin de reserve can be added, followed by bottling and the subsequent prise de mousse in the bottle according to the Classic Method, associated with 60 months of ".aging sur lie. The final disgorgement is not accompanied by any dosage or addition of sulfites.

The Champagne Charles Dufour Blanc de Noirs ‘Bistrotage B.20’ Extra Brut displays an inviting golden yellow color with fine and rich perlage. The aromatic mosaic consists of scents of baked apple and figs, interspersed with hints of toasted almond, honey, and caramel, as well as delicate and integrated oxidative notes. The creaminess is pleasant, with the bubbles filling the palate and soon reached by the vibrant fresh-salty vein that dominates the finish. This is a Champagne that cannot leave one indifferent, the offspring of one of the most talented Récoltant from the Cote des Bar.
