The Extra Brut “Shaman” is a Champagne that originates from one of the most important Grand Crus of the entire denomination, that of Ambonnay. It is here that the Marguet maison cultivates the grapes of Pinot Noir and Chardonnay from which this label is born, intense and multifaceted on the nose and velvety on the palate. A certified biodynamic bubble, rewarding the path taken by Benoît Marguet, the young owner of the winery who fits into the trend of new vignerons of Champagne, characterized by a modern and unconventional vision.
This Champagne Extra Brut Grand Cru “Shaman” originates from a blend where, alongside 76% of Pinot Noir, we also find a percentage of Chardonnay. The clusters of these two varieties come from old vines, which grow within the Grand Cru of Ambonnay with principles that refer to biodynamic agriculture. Once harvested by the team of the Marguet maison, the grapes undergo the first fermentation in wooden vats, spontaneously, thanks to the presence of indigenous yeasts. The second fermentation then takes place, as per the rules for the production of Metodo Champenoise, in the bottle, where the wine remains to rest on the lees for 24 months. After the disgorging and dosage operations, the Champagne is bottled without the addition of sulfites.
The “Shaman” is an Extra Brut Grand Cru Champagne that, in the glass, presents itself with a typically straw-yellow color, slightly tending towards golden. The grain of the bubbles is fine, and has a good duration. The array of aromas that envelop the nose is orchestrated on fruity and citrus notes, enriched by hints that refer to the yeasts. On the palate, it is medium-bodied, broad and enveloping, with a sip characterized by a pleasant freshness and an enchanting creaminess; it finishes with a finale of excellent persistence. A label with which the Marguet maison confirms its artisanal vision in the production of the most famous bubble in the world.
