The Cognac Grande Fine Champagne XO presents itself, starting from its classification, as a product of character. The acronym “XO” in the world of Cognac indicates, with an abbreviation from the English term “Extra Old,” a product with significant aging: this label indeed ages for at least 6 years in wood, denoting a sumptuous profile, where the character is savored with every sip. This is thanks to the work done by the Peyrot family, which has been dedicated body and soul to the production of spirits in Jarnac for four generations, not far from the village of Cognac. A Maison always attentive to creating productions where quality prevails over quantity.
This Cognac Grande Fine Champagne XO is born from the distillation of white wine whose grapes are cultivated by Maison Peyrot within vineyards located in the areas of Grande and Petite Champagne. It should not be forgotten that Peyrot manages all its vineyards applying integrated pest management principles, banning the use of pesticides and chemical fertilizers. The distillation process of the wine takes place through imposing copper stills, which capture the most interesting aromas. At the end of the processing phase, the Cognac remains to age in oak barrels for at least 6 years.
The Cognac XO Grande Fine Champagne made by Peyrot presents itself to the visual examination with a very bright amber color, crossed by reflections tending towards gold. The aromas that envelop the nose recall layered notes of dried fruit, enriched by spicy touches and more woody sensations. On the palate, it is full-bodied, enveloping, broad, characterized by a sip that stands out for its persistent finish. A bottle to sip after dinner, reflecting on the day just passed.
