The Franciacorta Extra Brut by Ca' de Pazzi is a vintage Blanc de Blancs with a elegant and intense demeanor, just like the roaring image of the lion depicted on the label. This is the latest newcomer, the result of the brilliant and revolutionary mind of the young winery Ca' de Pazzi, which in 2018 decided to launch this young and modern project in Franciacorta, relying on the hands of winemakers who produce according to local tradition. A simple and straightforward approach, uncompromising, looking to the future and communicating through quality sparkling wines, characterized by wonderful pop labels featuring the face of an animal with human-like traits. Each animal personifies the character of the sparkling wine; in this case, the Lion is the emblem of the noble power of this wine, which with its irreverence and personality can pair with both fish and meat menus.
The Extra Brut Ca' de Pazzi is made from pure Chardonnay grapes, sourced from various vineyards scattered in Erbusco, in the heart of Franciacorta. The grapes are carefully selected and brought to the winery, where they undergo a soft pressing. The alcoholic fermentation takes place in steel at controlled temperature. The different base wines obtained are skillfully blended to create the cuvée. The second fermentation is carried out in the bottle according to the dictates of the Metodo Classico, with aging on the lees that lasts for 24 months.
The Franciacorta by Ca' de Pazzi colors the glass with its straw-yellow appearance with golden reflections, marked by a fine and lasting perlage. On the nose, it offers pleasant sensations of bakery and dried fruit, accompanied by hints of citrus, white fruit, and wildflowers. It captivates on the palate for its impeccable balance between power and refinement, enclosed in a complex body with a lifted freshness, which makes the texture taut and dynamic.
