Il Ceo, a young man from Veneto, is Davide Andreatta, who has recovered old vines in order to preserve them and produce wines with artisanal care, like this ‘Vespri’. Fresh but also pleasantly oxidized aromas emerge from the glass, a slight effervescence tickles the nose and prepares for the lively sip. The attack is very savory, then the wine develops with grace and good persistence.
The Frizzante Ancestrale Il Ceo ‘Vespri’ is a white wine refermented in the bottle with a original and lively personality, produced by vinifying grapes from an old recovered vineyard. Davide Andreatta's adventure in the world of wine, owner of the Il Ceo winery, officially began in 2014, the year in which the winemaker rented a very old vineyard, partly planted with traditional varieties and partly with international grape varieties. Today Davide's goal is clear: to primarily enhance local grapes through an agronomic and oenological approach in sincere harmony with the environment and with the unique expression of the Breganze territory.
The Ceo ‘Vespri’ Frizzante Ancestrale is made with a single white grape variety grown in accordance with the principles of biodynamic agriculture. After manual harvesting, the vinification of the grapes follows through spontaneous alcoholic fermentation, partly in fiberglass tanks and partly in steel vats, accompanied by just 24 hours of skin maceration.The subsequent light sparkling takes place in the bottle according to the Ancestral Method, with the addition of grape must as a sugar source for the yeasts. Throughout the entire process, the use of clarification and filtration operations is excluded.
The ‘Vespri’ Frizzante Ancestrale from the artisanal reality Il Ceo has a light and lively straw-yellow color. The nose is defined by aromas of apple, jasmine, mown grass, wildflowers, and almond. On the palate, it is fresh and very savory, with a lively yet fine effervescence that enhances the dry, clean finish with good persistence, characterized by pleasantly oxidative sensations. This Ancestral Method is ideal to enjoy as an original aperitif, as well as at the table paired with fresh goat cheeses.
