The Frizzante Rosé Ancestrale from the Veneto winery Il Ceo is a bottle-fermented wine characterized by good structure and tension, the result of a sincerely artisanal production approach. In fact, behind the small estate Il Ceo lies the genuine winemaking vision of Davide Andreatta, a winemaker who enthusiastically embarked on his winemaking adventure in 2014. In particular, the producer's philosophy is based on the total exclusion of synthetic chemicals both in the vineyard and in the winery, relying on indigenous yeasts for the fermentation processes, adding no or minimal sulfites during winemaking, and excluding the use of new wood, all aimed at offering the purest and most crystalline expression of the Breganze territory.
The Ceo Frizzante Rosé Ancestrale originates from a blend of grapes from two black grape varieties grown according to the principles of biodynamic agriculture. The hand-harvested bunches are vinified as rosé in steel or fiberglass tanks, separately for the two varieties, through a brief skin maceration, with the alcoholic fermentation entrusted solely to the yeasts present on the grapes and in the winery environment. The refermentation occurs in the bottle according to the Ancestral Method through the addition of frozen must from the same vintage, and throughout the entire process, the use of clarification and filtration operations is excluded.
The Frizzante Ancestrale Rosé from the Il Ceo estate has a pale cherry pink color with orange reflections. The aromatic profile is described by fresh notes of grapefruit, lemon zest, red currant, candied orange, and orange blossom. The important freshness is confirmed on the palate, accompanied by a marked savory trail that gives structure and tension to the progression, anticipating a dry and citrusy finish.
