The Grappa Paolo Berta “Selezione del Fondatore” is born from the distillation of the pomace of two strongly identity-defining grape varieties of the Piedmont terroir, Nebbiolo and Barbera. Once fermented, the pomace is distilled under the watchful eye of Berta's master distiller. The steam stills are the true protagonists of this phase, allowing the isolation of the most intense and soft aromas in the ““heart” of the distillate, the most intense and soft aromas. Once the final product is obtained, it is aged for 20 years in small barrels, made from different woods.
