The Grillo “Caeles” is a Sicilian white wine certified organic made by the Firriato winery. Respect for the land and nature is at the core of the philosophy of this white wine, where aromas and taste are straightforward and genuine. Fresh and exotic fruits alternate with hints that recall the Sicilian Mediterranean scrub, in a territorial label that loves to assert its roots also thanks to the grapes of an important indigenous variety, Grillo. A white to be savored to the last drop!
The “Caeles” Grillo is made from the eponymous grapes, used in purity by Firriato. The bunches, certified organic, come from vineyards located in the Trapani area, within the Tenuta di Borgo Guarini, facing north and characterized by a sandy-clay subsoil. The grapes, once harvested in the third decade of August and brought to the winery's vinification facilities, ferment in stainless steel containers, without undergoing malolactic fermentation and without the use of animal-derived products at any stage of production, thus being certified as vegan as well. The aging takes place in steel, where the wine remains to refine on the noble lees for about 3 months.
The white wine Grillo “Caeles” presents itself with a very bright straw-yellow color. The olfactory spectrum that develops on the nose is structured on floral and fruity notes, enriched by more Mediterranean and iodized nuances. On the palate, it is light-bodied, lively and carefree, with a refreshing drink characterized by a beautiful mineral texture. A bottle that consecrates the path of the Firriato winery towards organic and vegan, with a clear wine, free from any imperfections, ideal to be enjoyed alongside fish dishes.
