This very low-alcohol Kombucha makes for interesting pairings with dishes with strong flavours such as a spicy white meat main course, but is also perfect for making unusual and original cocktails!
The young and innovative Milanese reality AKA presents the Kombucha ‘Lapsang Souchong’, a beverage with a very low alcohol content that stands out for its deep smoky aroma. In fact, Lapsang Souchong is a variety of black tea originating from China that is dried and smoked with pine or cedar wood. This peculiar processing gives the tea a characteristic smoky aroma, a quality passed on to this delicious kombucha. The origin of this process dates back to the 17th century when civilians from the Wuyi Mountains, fleeing from the soldiers of the Qing dynasty, decided to dry the freshly picked tea leaves over fire to prevent them from deteriorating and causing the inevitable loss of the harvest.
The Kombucha AKA ‘Lapsang Souchong’ is made from a base of Lapsang Souchong tea infusion to which raw cane sugar is added, along with the so-called “scoby”, a symbiotic culture of yeasts and bacteria essential for the production of kombucha. Subsequently, the fermented drink is bottled with the addition of selected Champagne yeasts, which carry out the second fermentation in the bottle according to the Champenoise Method. Among the other ingredients used is kefir water, also known as “Tibicos”.
The Kombucha ‘Lapsang Souchong’ from the production reality AKA has a cloudy straw yellow color. The aromatic bouquet expresses peculiar notes of malt, almond, and smoke, sensations that are found on the palate, enhanced by the lively and cheerful freshness.
